5 Quick and Easy Dinners for Busy Weeknights: We know that in today’s busy life, lack of time often forces us to give up home-cooked food. 1. Veg Stir-Fry Noodles

Material:

  • Noodles: 200 grams
  • Bell pepper (red, green, yellow): 1 cup, finely chopped
  • Carrot: 1 cup, finely chopped
  • Onion: 1, finely chopped
  • Ginger-garlic paste: 1 teaspoon
  • Soy sauce: 2 teaspoons
  • Oil: 2 tsp
  • Salt and pepper to taste

Method:

  1. Boil and drain the noodles.
  2. Heat oil in a pan and add ginger-garlic paste and fry.
  3. Add onion and all the vegetables and fry for 5 minutes.
  4. Add boiled noodles and add soy sauce, salt and pepper and mix well.
  5. Serve hot.

2. Chicken Salad

Material:

  • Boneless chicken: 200 grams, boiled and chopped
  • Lettuce: 1 cup, chopped
  • Tomato: 1, chopped
  • Cucumber: 1, chopped
  • Olive oil: 1 teaspoon
  • Lemon juice: 1 teaspoon
  • Salt and pepper to taste

Method:

  1. Combine chicken, lettuce, tomatoes and cucumbers in a large bowl.
  2. Add olive oil, lemon juice, salt and pepper and mix well.
  3. Serve immediately.

3. Paneer Tikka Masala

Material:

  • Paneer: 200 grams, chopped
  • Curd: 1/2 cup
  • Ginger-garlic paste: 1 teaspoon
  • Red chilli powder: 1 teaspoon
  • Garam Masala: 1/2 tsp
  • salt as per taste
  • Oil: 2 tsp

Method:

  1. Marinate the paneer by mixing curd, ginger-garlic paste, red chilli powder, garam masala and salt.
  2. Heat oil in a pan and add marinated paneer pieces and fry till they turn golden brown.
  3. Serve hot Paneer Tikka Masala.

4. Rice and Moong Khichdi

Material:

  • Basmati rice: 1 cup
  • Moong Dal: 1/2 cup
  • Onion: 1, finely chopped
  • Tomato: 1, chopped
  • Green chillies: 2, chopped
  • Ginger-garlic paste: 1 teaspoon
  • Turmeric powder: 1/2 teaspoon
  • Cumin: 1 teaspoon
  • Ghee: 2 spoons
  • salt as per taste

Method:

  1. Wash rice and moong dal and soak for 20 minutes.
  2. Heat ghee in a pressure cooker and add cumin seeds.
  3. Add onion, green chilli and ginger-garlic paste and fry.
  4. Add tomatoes, turmeric powder and salt and cook.
  5. Add soaked rice and moong dal, mix, add required amount of water and cook till 3 whistles of the cooker.
  6. Serve hot khichdi.

5. Mix Veg Sandwich

Material:

  • Bread Slice: 4
  • Butter: 2 spoons
  • Cucumber: 1, chopped
  • Tomato: 1, chopped
  • Boiled potatoes: 1, chopped
  • Green Chutney: 2 spoons
  • Salt and pepper to taste

Method:

  1. Apply butter and green chutney on bread slices.
  2. Place cucumber, tomato and boiled potato slices.
  3. Sprinkle with salt and pepper and arrange the sandwich with the other bread slice.
  4. Can be lightly toasted on the pan.
  5. Serve hot sandwiches.
